5 cups assorted veggies ( I used peas, potatoes, turnips, carrots, brocoli)
1 can of coconut milk
1 can of water (fill the coconut can that you just emptied)
1 heaping Tbsp of almond butter
1 Tbsp of garlic (minced or granulated)
1/2 tsp tumeric
2 tsp of curry powder
lemongrass (optional, i used about 2 inches of fresh and chopped in itnto about 5 pieces)
salt to taste
- Bring water, coconut milk, and spices to a boil in a big pot.
- Add veggies and simmer with a lid until veggies are cooked.
- Simmer for an additional 10 minutes or so with no lid so the sauce thickens.
- Serve over rice or with home made bread.
- Garnish with a bit of plain yogurt with a sprinkle of dill and waltnuts or almonds.
